The S-M's buy in a bit of fruit for this wine but still top notch Grand Cru fruit

Grand Cru is the name given to the top 2% of the total area of Champagne vineyards. The next lower level is premier cru (10% of the total area). "Normal Champagne" accounts for the remaining 88%.

Cuvee des Crayeres is a 100% Chardonnay de Chouilly (a Blanc de Blanc from the Cote de Blancs which is not the easiest thing to say after a bottle or 2). Their vintage wine produced in great years. This wine is six years old & is just starting to open up its flavours now, it will cellar for decades too. It is remarkably cheap, don't tell him though or the price might go up!
