Bouchard Finlayson "Crocodile's Lair" Chardonnay 2006 14% ALC.(Walker bay, White) "Crocodile's Lair" takes its name from the farm where the grapes are grown (nowhere near Dundee). Finlayson identified the potential of this 700 metre high vineyard with continental-like climate. Grapes are harvested by hand and chilled overnight in a cold storage before transfer to the winery. Bunches are pressed whole without skin contact. Fermentation is in stainless steel, and the wine transferred to barrel after ten days. What this all boils down to is rigorous attention to detail, cracking quality raw material = a world class bottle of wine.

The palate is gentle with a creamy blanket of ripe structured fruit. Fabulous as an aperitif, but best with food. Please let it breathe a wee while & dont over-chill.
