Air Dried Ham  
Soft and luxurious, our air-dried ham is hung for a minimum of 3 months to develop the exceptional flavour of this locally reared pork.
 
Cherry Smoked Caraway Kielbasa
To celebrate his Polish roots Head Charcutier, Joe, has developed a special salami using a blend of caraway seeds, marjoram and Żubrówka Bison Grass Vodka. This version is lightly smoked over cherry wood. It’s Joe’s first ECC recipe and we’re extremely chuffed with the results!
 
Truffle and Porcini Salami  
Our triple-award winning Porcini & Truffle salami is one of our best sellers. We use pork, porcini mushrooms and truffle oil to create this rich, earthy and indulgent salami. A talking point in any sharing platter, our Porcini and Truffle salami’s robust flavour profile stands up well to big hearty red and white wines and is an excellent accompaniment to strong dark beers and crackling fires.
 
Bourbon Chorizo 
Our interpretation of a Spanish classic, this Chorizo is bursting with flavour. Seasoned with our special blend of spices, a few herbs and a wee drop of red wine and bourbon, our chorizo packs a punch. We combine the slow-cured loin of the pig with the other ingredients to give it a particularly authentic texture. Try our Chorizo with an aperitif of bourbon on the rocks or as the flavour finale of a charcuterie board. Great to cook with, we often have it with scrambled eggs and spinach on buttery toasted sourdough. The perfect Sunday brunch!
