Description
LEITH: A succulent and decadent Pedro Ximenez produced by Bodegas Baron and bottled by the Port of Leith Distillery. Eventually, Port of Leith will use sherry casks from Bodegas Baron to age their own whiskies made round the corner from Grog. Pretty cool!
Made by drying out the already sweet Pedro Ximenez grape on mats in the sun to give a decadent viscous syrupy treat. Tastes like pure raisin juice. Most of these grapes are grown in nearby Montilla-Morilles and then transported to Jerez for winemaking. Why and how this is allowed is a quirk of history. PX is a very different wine to the other sherries and is almost an outlier in itself. Originally used as a darkening and sweetening component of other sherry blends, such decadent Pedro Ximenez is now common as a single varietal that once tasted is never forgotten – at least by your dentist!
