COTES DU JURA. Full and intense flavous of walnuts and hazelnuts.
This is essentially the “Grand Cru” appelation of the Jura. As with other Vin Jaune, it is made from 100% late picked Savagnin (usually in October). The wine is fermented in small barrels, slightly exposed to oxygen but under a fungal skin called “voile” or veil, similar to “flor” in Sherry. Unlike Sherry, Vin Jaune is not fortified. With Chateau Chalon, the grape must have a higher potential alcohol level (i.e. riper grapes), and they must be grown in a tiny historic area for Vin Jaune production.
