JEREZ: Amontillado is the best of both worlds, combining both biological and oxidative aging for a nuanced and complex sherry. Slightly darker than the fino, but similar dry, saline experience. A wee bit sweet to start followed by raisened, nutty, tangy notes before a dry finish. Pretty complex sherry and great as an aperitif with some olives to watch the world go by. Some say, and we probably agree, that it is the most complete form of sherry.
Amontillado begins biologically aged like Fino and Manzinilla, aged under a layer of Flor. However, unlike those styles, the Flor in Amontillado is either left to die or killed by the addition of further alcohol. It is then added to an Amontillado solera where it is oxidatively aged. Amontillado takes on a golden hue and combines the freshness and salty tang of a Fino/Manzinilla with the nutty, dry fruits and spice of an Oloroso. Complex indeed!
