Wild or Sour

Wild/Sour. The terms “wild” and “sour” ales will normally refer to anything that is traditonally brewered within Belgium. Although the same practices may occour, they are often seen as non tradtional or imitations of their counter parts, Lambics. This may be true on some level, however, it has led to a great variation and explosion of the style. Wild yeast can add an incredible life into a beer, with Brettanomyces acting as an inoculant allowing beer to live on a develop incredibly complex flavours.

These little creatures in our wild ales often leave funky notes behind, some see this as strange, whereas i personally see it as interesting. The diversity that has happened with a wealth of wild ales being popped in barrels for years or stales ales being brought back from the dead has created an insane amounts of variation that breaks the social normal.

Expect to taste literally anything Spontan Basil is like liquid pesto and it works.
