Dry sherries are made using Palomino Fino grapes (often shortened to Palomino), which are slightly low acid, low sugar, drought resistant grapes that oxidise easily – perfect for producing the neutral-ish wine needed for dry sherry. Oloroso, as opposed to Fino & Manzanilla, is produced using exclusively oxidative aging. This means that its flavour characteristics come from the long-aging period in large 500L sherry butts with oxygen contact encouraged – as opposed to most other types of wine. This results in tell-tale tasting notes of nuts, caramel, spice, cedar wood, tobacco, orange peel and a slight oiliness.
