Description
Jerez: This Port of Leith Oloroso sherry was produced by Bodegas Baron in Jerez and bottled for our friends round the corner. Bone dry, nutty, raisiny and absolutely fabulous.
Dry sherries are made using Palomino Fino grapes (often shortened to Palomino), which are slightly low acid, low sugar, drought resistant grapes that oxidise easily – perfect for producing the neutral-ish wine needed for dry sherries. Oloroso, as opposed to Fino & Manzanilla, is produced using exclusively oxidative aging. This means that its flavour characteristics come from the long-aging period in large 500L sherry butts with oxygen contact encouraged – as opposed to most other types of wine. This results in tell-tale tasting notes of nuts, caramel, spice, cedar wood, tobacco, orange peel and a slight oiliness.
Pairs magnificently with salted peanuts.
