Our closest supplier, Holyrood Distillery is less than 200m from the Dalkeith Road shop. The distillery was opened in 2019 and has become known for experimental production using a myriad of different yeasts, malts, casks and production techniques – in essence, the ‘craft beerification’ of whisky, being totally honest and not just using the highest yielding ingredients to maximise production. Their recent Noir series which we will be trying is a great example of this ethos. Not many distilleries are brave enough to take this very modern approach so we’re lucky to have them.
Jack will be leading the tasting, taking us through their range of hyper-local whiskies.
